Ubi, or purple yam, is among the country’s most popular food crops. Known to grow best in the province of Bohol than elsewhere in the Philippines, the province celebrates the Ubi Festival every year in January to celebrate this purple crop. And with purple associated with royalty, 1663 marks the complete victory of the Mindanao monarchies against the Spanish invaders. This is dark purple fountain pen ink.
